Copy admin in Customer emails
We would like a way to confirm that pickup and delivery emails are successfully sent to customers. Ideally, this could be accomplished by allowing an admin email address to be CC’d on all customer notification emails. Alternatively, displaying a record of the email (or its send status) within the order history would also work.

Having the ability to CC an admin email on pickup and delivery notifications or showing the email/send status within the order history is a great idea and could definitely help merchants confirm that customers receive their notifications.
